Where The Magic Happens

We are often asked about our baking process at All Things Cake.  We put out so many cakes each week and people often wonder about when and where we bake them all.  When we designed our new bakery, we separated our baking room from our decorating room to keep the heat away from the decorating process as much as possible.  This has enabled us to bake as often as necessary to keep up with customer demand.  In the past, we would have to wait until the evening to bake, so we wouldn’t heat up the kitchen during decorating hours.  But with separate rooms, we can now bake anytime we need to!

We bake in large batches to keep our process as efficient as possible.  We also bake to order, so if you order Italian Cream cake, we bake it fresh for you that week.  We start our baking process with a baking spreadsheet which lists each cake pan size we offer along with each flavor we offer.  We tally all the vanilla cakes, for example, and bake them all together.  Each tier of cake is made up of two or three layers of cake, so each individual layer is tallied and baked to order.  One 4-tier wedding cake would require 8 pans to be baked.  You can imagine just how many pans (layers) are baked in the height of wedding season!

Once all the cakes of one flavor are baked, we move on to the next.  We bake in commercial convection ovens, which circulate moist air throughout the baking process.  Depending on the cake sizes, we can bake a couple dozen layers at one time.

Once baked, we pull each layer out and have it cool on a rack.  Once cooled, the cake layers are leveled, wrapped and chilled overnight.  The following day, the cakes are filled, crumb coated, iced and decorated.  Freezing cake is not a part of our process at all.  While some bakeries swear by it, we feel that it dries out cake.

Of course, with lots of baking, comes lots of dishes.  We haven’t found a way to get around that yet!

Gold Digger

Metallics are big right now in the world of cakes and when it comes the metals, GOLD certainly takes the cake!

We took several trends and combined them to create this 5 tier beauty that will serve just under 150 people.   We mixed traditional 4″ tiers with a jumbo 6″ tier on the bottom to give this cake a little more height.  We placed it on a pedestal cake stand, which is very popular right now.  Additionally, we lightened our gold a little to give it more of a champagne/gold hybrid feel.  Then we added a pop of coral with the florals, which is the Pantone color of the year for 2019.  All these trends came together to create a sophisticated and elegant look.

The hand-piped details are what make this cake so special.  With a mix of scrolls, paisleys, flowers and other flourishes, these details are sure to wow your reception guests!

Princess Ella!

What kind of cake do you make for a princess?  A castle cake, of course!

We had so much fun building Ella’s Princess Castle Cake!  We started with two tiers of cake – enough to serve about 25-30 people.  We iced the tiers in pink buttercream and added a brick texture to them.  We then covered three columns in fondant and gave them the same brick texture.  Next, we added sugar cones to make the turrets and added a #4 flag detail to the top of each turret.

So many fun details made Ella’s cake stand out.  From the hand painted gold accents to the wood details of the front door and front walkway, each detail was created to help wish Ella a very happy birthday!

Tis The Season…For Wedding Shows!

January marks the new year, resolutions and the start of everyone’s diet.  But for those of us in the wedding industry, it also marks engagement season, which means WEDDING SHOWS!

We LOVE wedding shows!  We love meeting people and sharing our cake samples.  We love the oohs and aahs as people walk by and see our display cakes.  And we absolutely love when we hear people say, “Oh that’s All Things Cake!”  This exclamation is typically followed by an event, party or wedding where they had our cake and loved it!

This past Sunday marked the largest of the wedding shows that we participate in, the Tulsa Wedding Show, which was held at the Renaissance Tulsa.  We gave out over 700 servings of cake!  We sampled our wedding white vanilla cake with vanilla buttercream and our almond cake with vanilla buttercream filling.  So delish!

In addition to the samples, we gave out our engagement ring sugar cookies to all the brides that booked a tasting with us!  Let me just say…we are going to be offering A LOT of tastings in the coming weeks!

Unicorns Everywhere!

You have probably seen a version of this cake floating around the internet.  It’s the chubby unicorn who is in a cake coma after nibbling on birthday cake.  From the moment that we saw this cake on facebook, we couldn’t wait for someone to order it from us!

This cake has the look of any ordinary cake — it started as 2 layers of chocolate cake with a buttercream filling.  We then iced it in blue buttercream and added some pink and purple flourishes to coordinate with the unicorn theme.  We added a sentiment plaque on top with a unicorn sprinkle mix border.

Next we removed a portion of the cake and placed the chubby unicorn on the cake.  To create the adorable unicorn we sculpted him from satin ice fondant.  3D elements like this on cakes typically take some time to dry, so he was started about 1 week in advance.  His body is sculpted, then his head.  After that his limbs are attached and hooves are painted gold.  Finally, the facial details are added including the colorful mane, gilded horn and cute little tongue sticking out.  Each of these elements are individually made and attached to the unicorn.  Once he is complete and dry enough to move, he is placed on the cake.  Some additional cake crumbs were sprinkled on the board to complete the effect.

Gone Fishing

Here in Oklahoma, we get a lot of requests for hunting and fishing themed cakes and this is one of our very favorites.  This bash fish jumping cake is always a crowd pleaser and the talk of the party!

To create this cake, we start with 2 layers of cake and a delicious filling.  We ice the cake smooth in buttercream or fondant, whichever the client prefers.  We then airbrush the cake to give it an ombre water effect.  We add edible cat tails, blades of grass and chocolate rock accents around the sides of the cake.

For the topper, we start with rice cereal treats and mold them into the shape of the fish.  We add a layer of fondant and texture it before it has time to dry.  Once it sets, we add the 3D fins and gills, which are also made of fondant.  We then airbrush the fish to give it more realistic coloring and brush it with a luster dust.  We add the eyes and he’s done and ready to place on the cake!

We like to keep as much of our cakes edible as we can, so using buttercream, fondant, chocolate rocks, rice cereal treats and edible coloring.  We think he’s the perfect addition to your favorite fisherman’s celebration!

Drip, Drip, Baby

Nearly naked drip cakes are the best combination since chocolate and peanut butter.  These cakes are beautiful and delicious and rustic and sophisticated and simple and elegant all at the same time!

We had the privilege of creating a cake bar for a wedding that was made up entirely of nearly naked drip cakes.  Each cake was a different flavor combination.  Think almond cake with a strawberry filling and chocolate cake with rich mocha filling.  These combinations alone were mouth watering.  And then we added…THE DRIP…Delish!

To get the look of this cake bar we started with 2-3 layers of cake with filling in between.  To get the nearly naked look, we added a thin layer of buttercream.  This serves to lock in the moisture of the cake without fully icing it.  After the cakes have a thin layer of icing on them they are chilled.  Once chilled we added the drip.  In this case we used a chocolate ganache on some and a caramel drip on others.

We added pops of color with fresh strawberries and raspberries as well as fresh flowers and coordinating colors of french macarons.  Each cake was placed on a white cake drum and then placed on a white pedestal.  The white table linens and accents made the vibrant florals and  the colorful accents really stand out.  Stunning!

 

 

Like, Totally, For Sure

Boom Boxes, Pac-Man, Rubik’s Cubes, Big Hair, Bright Colors.  Need anymore clues about the theme of this party and all their treats?  Like, it’s totally the 80’s, for sure!

For this super fun party, we were given free reign to create treats for 60+ people.  This party was held at Wheel’s and Thrills in Owasso, OK, which is a great venue for a party – especially one of this theme!

We chose to create a centerpiece cake and several small treats to serve the guests.  The cake was three layers of neon colored vanilla batter that we marbled together.  The layers alternated with buttercream filling and we iced the entire cake in smooth hot pink buttercream.  For the boom box accents we created fondant speakers, dials, a tape deck, antenna and handle.  Everything is edible!

For the additional treats we chose some crowd pleasers:  Chocolate Dipped Pretzels, Brownie Bites, Chocolate Dipped Strawberries and Cake Pops!  Each bite was accented and drizzled with neon colored chocolate, sprinkles or sugars.

For the party favors, we found a collection of 1980’s images, printed them on edible paper and attached them to cookies and added neon sprinkles.  We then bagged and tied them with coordinating ribbon.

Overall, this was such a fun AND DELICIOUS party to be a part of!

First Wedding Cake of the New Year!

It’s just January 3rd, but we’ve already got our first wedding cake in the books for 2019… And boy was it a beauty!

This cake was delivered to the beautiful Camp Loughridge.  This venue is a favorite due to it’s natural light and high ceilings.  The event draping for this wedding was stunning!

For the cake, we stacked three round tiers and iced them with horizontal textured buttercream.  A cascade of mulit-colored flowers and greenery added a gorgeous pop of color.  The cake topper added the finishing touch to this beautiful cake!  Congratulations to the happy couple!!

 

Llama Drama

Some weeks at the bakery are full of similar cakes created for similar themes.  We tend to do a lot of unicorns for birthdays and a lot of naked cakes for weddings.  Trends come and go and *most* of them we love!  One trend that is picking up momentum is the llama trend and we couldn’t be more in love with these adorable creatures.

Recently we received a request for a llama and cactus themed baby shower cake.  The customer came to us with an invitation to coordinate with, which had the color scheme of navy, pink and white.  This shower needed to feed 20+, so we opted for a two-tier design.   We iced this cake in all buttercream with smooth white on the top tier and ombre pink on the bottom tier.  We pulled in the navy with horizontal fondant bands on the top tier and accented the llamas with navy on the bottom tier.  For the llama and cactus theme, we hand cut llamas and cactus from fondant and left them to dry.  Once they hardened, we accented them with painting and buttercream and placed them all around the bottom tier.  We skewered a couple of the cactus pieces to place as the topper and completed the look with a pink “Welcome Eloise” plaque on the top tier.  This one was simple and sweet and a favorite at the bakery!
