Tuxedo strawberries are a sophisticated and delicious addition to weddings, parties, or any special occasion. These chocolate-dipped strawberries, styled to resemble mini tuxedos, are not only a treat for the taste buds but also a feast for the eyes. Here’s how we create these elegant strawberries at All Things Cake and tips for making and storing them at home.
Ingredients and Tools
To make tuxedo strawberries, you’ll need:
- Fresh strawberries (choose firm, ripe berries with green leaves intact)
- High-quality white chocolate*
- High-quality dark or milk chocolate*
- Parchment paper
- Toothpicks (optional for dipping)
*We use Merckens chocolate, which we also sell in our retail store.
Step 1: Prepare the Strawberries
- Wash Gently: Rinse the strawberries under cold water to remove dirt and debris. Be careful not to bruise them.
- Dry Completely: Pat the strawberries dry with a clean kitchen towel or paper towel, then leave them to air dry completely. Moisture can prevent the chocolate from sticking, so ensure the berries are fully dry.
- Room Temperature: Allow the strawberries to reach room temperature before dipping. This prevents condensation from forming on the chocolate.
Step 2: Dip in White Chocolate
- Melt the Chocolate: Gently melt the white chocolate in a microwave or double boiler until smooth.
- Dip the Berries: Hold the strawberries by the leaves or use a toothpick. Dip each berry into the white chocolate, covering about two-thirds of the surface.
- Set: Place the dipped strawberries on parchment paper and let the white chocolate set completely before proceeding to the next step.
Step 3: Create the Tuxedo Effect
- Melt Dark Chocolate: Melt the dark or milk chocolate until smooth.
- Dip for the Jacket: Hold the strawberry at an angle and dip one side into the dark chocolate. Repeat on the opposite side, leaving a white triangle visible in the center to form the shirt.
- Add Details: Use a small piping bag or toothpick to draw a bow tie and buttons on the white chocolate shirt.
- Set: Place the finished strawberries on parchment paper and allow them to set completely at room temperature or in the refrigerator.
Tips for Storing Tuxedo Strawberries
- Store in a Cool Place: Keep the strawberries in a cool, dry place or in the refrigerator if your kitchen is warm.
- Avoid Humidity: Excess moisture can cause the chocolate to sweat or lose its shine.
- Serve Fresh: Tuxedo strawberries are best enjoyed the same day they’re made. If storing, place them in an airtight container lined with parchment paper and consume within 1-2 days.
