How cute is this KISS cake?!

This cake was created from a 6″ jumbo, which is three layers of cake with filling in between each layer. We crumb coated the cake in buttercream to lock in the crumbs and then chilled the cake. Next came the final coat of buttercream and another round of chilling in the fridge.

For the accents on the cake, we created the fondant lips and made some macarons. We added a lime green drip to the cake and then attached the premade accents. We added some buttercream stars with a tip 21 and the cake was complete. Muah!

Nine Tier Wedding Cake

Nine tiers. You read that right. N I N E Tiers of cake!

This cake was amazing to create. The inside was a combination of Chocolate Cake, Vanilla Cake and Red Velvet Cake with varying fillings. We allow our clients to have a different flavor and filling in each tier if they choose. It’s always fun to offer your guests a few different flavors to choose from.

The outside of this cake was iced in white buttercream. For the bottom three tiers, we added small fondant diamonds using these cutters. We had several smooth tiers and some we airbrushed gold. At the base of each tier we added a gold fondant band to anchor each tier. A jumbo fondant monogram was added tot he front of the third tier.

Once the cake was onsite at the venue, we placed the flowers that the bride provided in a spiral cascade. They added the perfect pop of red to the white and gold of the cake. Our favorite faux flowers for cakes are these. They are more realistic than those found in local craft stores and come in so many colors!

2023 Wedding Trends

I love ALL wedding cake designs, I really do! But one of my favorite things about the new year and engagement season, is seeing what trends start to emerge with couples and their cakes.

When we meet with a new couple, we ask them to bring images and ideas that they want to incorporate into their cakes. Most of the time, couples have images they like on their phone, sometimes they print their ideas out and occasionally couples come in with their invitations, swatches, monograms and other more abstract ideas.

We love to design cakes using any and all of these methods! When brides show me their Pinterest boards, I love it because I can immediately get a feel for their style. Usually, there will be 3-4 pinned cakes that have similar elements and I can tell right away what they like.

It’s only mid-January, but the trends I’m seeing emerge at this point are the following:

Pearls: Scattered sugar pearl cakes started making the rounds last year and continue to be popular this year. Pearl/bead borders are back, too! While these sugar pearls are edible, some of the larger ones (8mm+) can be really hard and you can potentially break a tooth…eek! Be sure that your baker understands to use sugar pearls and NOT dragees, which are plastic and not edible. And if you choose a design that includes larger pearls, make sure they are removed before serving.

Clear Separators: The floating cake look and acrylic separators have been gaining popularity in the last several months and will continue into the 2023 wedding season. Our favorite separators are here, but you’ll want to check with your baker to make sure what size you need.

Piped & Painted Florals: Cakes that include florals, but not with fresh or silk flowers are becoming very popular! Piping flowers with buttercream and palette painting on cakes is a great way to add a pop of color to your cake while keeping it 100% edible!
Nearly Naked: These cakes aren’t going anywhere! The very thin layer of icing on these cakes allow the actual cake to show through, giving it an interesting and rustic look. While we are still creating a lot of these cakes, some guests are opting to offer bowls of icing or filling at their cake tables, so guest who love icing can add a bit more to their slice. Also, be sure you’re aware of what each cake flavor your baker offers will look like as a nearly naked cake. Strawberry cake is usually pink and the red coloring of Red Velvet will be visible on this cake style, so make sure you’re cool with that look.

Large Cakes: For the past several years, we have made A LOT of Kitchen Cakes. Kitchen Cakes are essentially sheet cakes on steroids. Our Kitchen Cakes are 4″ tall and include two layers of cake with a filling, so that, once cut, no one can tell the difference between a piece of the main cake or the Kitchen Cake. These extra servings are typically cheaper, so couples can have a smaller cake on display and still serve all of their guests a bit more affordably. However, this year, we are seeing larger cakes that serve all the guests. Our four tier 6-8-10-12 cake will serve 118 and allow for the couple to save the complimentary anniversary tier on top. This cake is perfect for the 150 person reception and is, hands down, our most popular cake size. (Each of the cakes above are this size.)

We are also seeing faux tiers to make cakes larger than the couple actually needs for servings. For example, the same 6-8-10-12 cake mentioned above only serves 62 if the bottom tier is faux. Couples can still have the 4-tier look, but only serve 62 with the use of a faux tier.

Trend Alert: Comic Cake

With some trends I’m ready for them to phase out the same day they phase in. But not this trend…it’s a keeper!

Comic cakes are the latest trend to hit the cake scene. They are created to look like drawings with their coloring and outlining. They are not terribly difficult to create, but can be time consuming with the black outlines needed to get the look.

Our favorite fondant extruding tool made the job so much easier! You just roll your fondant into a sausage or snake shape and load it into the extruder. When you turn the handle, it pushes the fondant through the selected plate, in this case a thin hole. It makes all your outlines the same thickness and consistency is so important with this cake style.

It’s Engagement Season!

At All Things Cake, we love LOVE! Working with wedding couples is probably my favorite part of my job!

Wedding season for us primarily runs from April-October. So in the “down time” from November-March, we conduct A LOT of cake tastings and consultations.

Many couples get engaged over the holidays from Thanksgiving to Valentine’s Day. And once they get engaged, the planning begins! So with engagement season in full swing, we are busy answering inquiries from newly engaged couples, working with wedding venues on Open Houses and networking with other wedding vendors to make the upcoming Wedding Season amazing!

For couples looking to work with All Things Cake, we first recommend that they book their venue and set their date. We can’t really move forward with a couple that hasn’t set a date because we can’t guarantee that we are available for their wedding without it.

Once their date is set and venue is selected, setting a budget and guest list is next. One of the first things vendors will ask is the approximate number of people they will have at their reception. We base our recommended number of servings on this as well. We recommend that you have cake or dessert for at least 80% of your guest count. So for a reception guest count of 150, you’ll need about 120 servings of cake.

Even if the bride and groom aren’t “Cake People” we still recommend that you have plenty of cake. Some people go to the reception JUST FOR THE CAKE! However, if the couple tends to love something sweet other than traditional cake, I wholeheartedly recommend that you incorporate that into the reception. We often have couples that love brownies or cookies instead of cake. We still recommend that you have some cake, but feel free to make the desserts your own!

Love is in the Air

How sweet is this cake?!?

This was a small wedding cake for the sweetest couple! For this cake, we started with two tiers. Whenever we have a small wedding we always recommend that they have at least two tiers of cake. This allows them to cut the bottom tier (to feed each other a bite from,) and one tier to save for their first wedding anniversary as tradition goes.

With a clean base of white buttercream on this two tier, we added a watercolor edible image of the couple and added a fondant skirt for the wedding dress. Edible gold leaf and gold non-pareils were added for an elegant touch.

Popular 2023 Wedding Dates

It’s only one week into 2023 and we are already seeing a handful of popular wedding dates emerge.

While we do wedding cakes all year long, we definitely do more from April-October. And of those months, May, June and October are by far the most popular. So what trends are we seeing and what dates are already close to booking?
